Kulfi: the Mr Whippy of the East!

The Nawabs introduced ice cream to the north eastern frontier and carried the traditional ice cream making secrets from Delhi.

Large square pits, two feet deep were dub in the cooler winter months. The bottom was lined with rice husks on which was placed a number of shallow porous terracotta pans filled with boiling water. These were left undisturbed and in the morning the layer of ice that had formed was carefully collected and preserved in fifteen foot deep wells specially lined with straw and rough blankets. The mouth of the well was sealed and a thatch roof was built over it. Ice was mixed with saltpetre and used to cool sherbet and freeze kulfi in the summer.

Kulfi in metal cones was India’s first ice cream.
